We have several types of wine-making kits, some by RJ Spagnol:

Each kit yields 22 litres of wine, or approximately 27 - 28 750 ml bottles.  The wines from all types of kits will reveal their full potential with ageing, although they're ready for consumption when you bottle.  Here are some happy wine-makers... just double-click on the picture to see the full photo: photo of wine-makers

Our Cellar Classics and Selection kits require 6 to 8 weeks to produce high-quality wines with  superior flavour, colour and aroma.  Made from premium varietal grapes, these products yield deep, full-bodied wines with great flavour, aroma and complexity. Cellar Classics are known for producing some of the fullest-bodied red wines on the market.

Or you can choose from our Vintners Reserve, Vino del Vida or Chai Maison kits, requiring 28 days to produce a wine of great character, with superlative colour, flavour and aroma characteristics.

The Harbour Mist kits add a splash of natural fruit flavours to selected premium varietal wines for a light alcohol drink that is to be served chilled.  Delightfully refreshing.

Where possible, we've attempted to include the relative sweetness or dryness of our wines.  See the table below.

 

Limited Availability Wines... Selection Limited Edition and Vineyard Select

Every harvest season gives us the opportunity to offer  Selection Limited Edition, a collection of 4 special wines, released one each month beginning in January and ending in April.  These immensely popular wines - the cream of the crop - are available only during their respective months and traditionally sell out quickly.  The announcement of the coming wines are available in the fall.  Be sure not to miss out - call us for details and pricing.

Vineyard Select kits consist of 100% pure varietal juice in 23 L aseptic bags, allowing winemakers the opportunity to create award-winning wines of notable body and complexity.  Note that release dates are subject to the timing of the harvest.  We usually carry Cabernet Sauvignon, Gamay and Merlot, but please call for availability and pricing.

Selection and Cellar Classics Wines

Our Cellar Classics and various Selection kits require 6 weeks to produce a high-quality wine with superior flavour, colour and aroma.

Selection Spéciale is a showcase for specialty wines: Black Muscat, Cream or Dry Sherry, Icewine Style, Port and Millennium Sparkling Wine.

While our Selection kits are supplied by distinguished North American vineyards, Selection International wine series sources product from the world's other great wine-producing nations.

Vintners Reserve Wines

Or you can choose from our Vintners Reserve kits, requiring only 4 weeks to produce a wine of superior character and distinction.

Vino del Vida Wines

The Vino del Vida kits produce a number of quality whites in 4 weeks, using premium varietal wine grape concentrate and premium grape juices, selected from some of the finest wine regions in the world.

Chai Maison

The Chai Maison kits produce lively, fresh wines in 3 weeks, ready to be enjoyed without extended ageing.  Economy without sacrificing quality, these kits offer excellent value and are the ideal choice for beginning winemakers anxious to taste the fruit of their efforts.

Harbour Mist

The Harbour Mist kits combine the fruitiness of coolers and the clean refreshment of table wines for an entirely new class of beverages.  They've added a splash of natural fruit flavours to selected premium varietal wines for a light alcohol drink that is to be served brilliantly chilled.  The result is delightfully refreshing.

Bytown Beer and Wine carries Black Raspberry Merlot and Exotic Fruits White Zinfandel.

Dry/Sweet Codes

The sweetness of a wine is the sensory perception created during tasting, and though affected by such factors as residual sugar levels, it's not an absolute, measurable factor.  However, to guide you in determining the relative sweetness for each wine variety, we've applied the following recognised numbering scale to as many of our listings as possible:
